One of the oldest and most noble white grape varieties of Crete. Pale yellow-green in color, it offers refined aromas of yellow-fleshed fruits and white flowers. The palate is full and velvety, with refreshing acidity and a long, aromatic aftertaste.
Pairs beautifully with steamed lobster and shellfish, sautéed chanterelle mushrooms with garlic and thyme, or a boiled beetroot and carrot salad with alliums and ricotta.
Ideal serving temperature: 9–11°C
